Pasta Salads For Summer Nights

Thursday June 25                                                                                                                 6:00 – 8:00 pm                                                       $45

Using the bounty of the summer season, this class will feature locally grown vegetables and special sauces along with a discussion of the many styles and shapes of pasta. A refreshing soup along with enticing appetizers and a cherry upside down cake also included. And, of course, wine pairings.

 

Apricots! Apricots! Apricots!

Thursday July 2                                                                                                                     6:00 – 8:00 pm                                                       $45

Once again it is time to learn about the fabulous Blenheim apricots from San Benito County, a true treasure of Central California cooking. Served with cheeses as an appetizer, with greens as a salad, snipped into main dishes, cooked to make delectable sauces, and baked inside tender pastry for one of the best fruit pies ever! Wine pairings included. Don't miss this one, just in time for Fourth of July picnics!

 

Persian Cooking With California Emphasis

This is a very special class, featuring some classic Iranian foods adapted to ease in cooking and serving in your California home. Learn a bit of history regarding spices, lentils, rose water and more! Appetizers, kebabs, salad, soup and a special dessert along with wine pairings included.

 

Pulled Pork Barbecue

People call often to ask for a good pulled pork recipe and the techniques on how to make it without building a huge bonfire in the earth and cooking it all day long!   Come to this great class and find out how easy and delicious pulled pork is. Along with some appetizers, a good old Mississippi River salad, and summer dessert. This is a great menu for a nice outdoor neighborhood party. Wine pairing included. (I promise not to serve Iowa dandelion wine!)

 

Summer Soups And Biscuits

We sometimes forget how easy and nutritious homemade soups can be, especially in the summer when local vegetables are so readily available. This class also features cast iron cooking with old fashioned fabulous flaky biscuits with a honey butter shaved horseradish sauce. Caramel pudding served with fresh fruits of the season and wine pairings included. Don't miss it!

 

Grilled Chicken And Smoked Salmon

Thursday July 30                                                                                                                  6:00 – 8:00 pm                                                       $45

Now there's a combination! Chicken breasts rolled with flavorful smoked salmon and served with a fresh herbed sauce. Learn how to smoke salmon quickly and easily in your home with smoker bags and/or a stovetop smoker. Also, how to use a grill pan for chicken and vegetables. Class also includes appetizers, salad, and a cool summer dessert. Wine pairing included.

 

Paella And More

This is a repeat of the class on June 4, which sold out early. Paella Valenciana, Flan, Tapas, and more. Wine pairing Included. Learn about Spanish chorizo, cheeses, and especially how to make a fabulous paella.

 

Peaches And Other Local Fruits Of Summer

Thursday August 13                                                                                 6:00 – 8:00 pm                                        $45

Not just for pie, peaches are wonderful in salads, in sauces, as a salsa, grilled as a side dish with pepper steak, jam and yes, of course, the famous lattice topped pie with also be featured! Wine pairings included as there will be appetizers, a main dish, and salads.

 

Dim Sum - The Lunches Of China

Potstickers, shrimp and vegetable rolls with special dim sum sauces, stir fry vegetables, rice, and other fabulous specialties which have made Asian cooking famous all over the world. Learn a bit of history of these special foods while finding out how easy it is to prepare nutritious foods like this in our own homes for family and friends. Wine pairings included using local Central California wines.

 

Mushrooms! Stuffed, Sautéed, Grilled And More!

Learn about the many varieties of mushrooms and how to prepare them for appetizers, salads, main dishes and more. Herbed Couscous Stuffed Smoked Portabella will be featured, along with a creamy mushroom sauce to drizzle over your grilled burgers or steaks. Wine pairings included, don't miss this fabulous class!

 

Chicken And Herbed Dumplings

A great old-fashioned way to prepare chicken in a vegetable sauce and then finished with fluffy herbed dumplings. It's a Labor Day special! This class also features appetizers, crispy green salads, homemade dressings, and a very special lemon meringue pie. Wine pairings included.

 

Tomatoes And Zucchini!

Get the most out of the fabulous vegetables of summer, featuring heirloom tomatoes and a variety of summer squash. Fresh cream of tomato soup, zucchini frittata, special salads and vegetable cobbler, appetizers and dessert along with wine pairings complete this special class.

 

Make A Soufflé!

Thursday September 17                                                                            6:00 – 8:00 pm                                        $45

Learn how easy and spectacular it is to make soufflés! This class features eggs and all of their capabilities. Sometimes we forget how valuable eggs are in our cooking and baking so this class will highlight the various kinds of eggs available and how to use them to their fullest. Sauces, a cheese soufflé, a chocolate soufflé, a salad, vegetables and appetizers along with wine pairings included.

 

Featuring Fish!

Thursday September 24                                                                            6:00 – 8:00 pm                                        $45

Learn how to shop for fish. After that, the rest is easy! We will feature grilling, pan searing, saute, smoking, baking and frying fresh fish for appetizers, salads, main dishes and more. Salmon cakes with a delicate horseradish sauce will make you famous! Don't miss this informative class regarding one of this areas biggest industries. Wine pairings included, as wine and fish are just fabulous together!

 



Participation in course may involve student use of commercial cooking equipment and tools in a kitchen environment with other people. It is understood that the student releases Clementine's Kitchen LLC of all liability for any injury which the student may suffer while attending or participating in a course and understands and accepts the risks inherent in the preparation and cooking of food with other people in the kitchen. Parent or legal guardian signature is required for all minors under the age of 18.
