CLASS SCHEDULE Knife Skills -
Saturday, April 19 2:00
- 4:00 pm $15 This is not a cooking class but a semi-hands on
lesson on how to maintain your kitchen knives so that they will always be
sharp. Learn how to select the proper knife for the chore at hand, as well as
how to properly slice, chop and dice. Please feel free to bring along several
of your own knives. Tamales -
Wednesday, April 23 -OR- - Thursday, April 24 6:00 – 8:00 pm $45 Tamales and more! Learn how to make delicious tamales
quickly and easily as well as salsas, sauces, salad, dessert and more. This
class also includes a discussion and tasting of various chili peppers, from
mild to hot. Remove some of the mystique regarding these classic Grilling Fish
With Fresh Vegetables -
Wednesday, April 30 -OR- - Thursday, May 1 6:00 – 8:00 pm $45 This lesson will feature fish and seafood cooked
quickly and easily in your home kitchens for appetizers, main dishes, salads
and more. Take these recipes outdoors to your grill, or use a good sauté pan
or stove-top grill pan. Learn how to shop for the best fish available at the
moment, and how to pair certain fish with various vegetables. Wine pairing
and tastings included with this great lesson. Eggs Benedict
and More - Wednesday, May 7 - Coffee cakes, fruit tarts, vegetable salads and
wonderful eggs with a special Benedict sauce and also Baked Eggs with Smoked
Salmon and Garlic Sauce. All of these are perfect for summer brunches or
suppers. Four different wines to taste that will match up perfectly with each
course. Perhaps these will be great for your Mother's Day brunch! Sweet and Sour Pork - Wednesday, May 14 - Learn how to use a wok and a stir fry pan for a
variety of Asian specialties, highlighting authentic sweet and sour pork as
well as several Asian taste treats.
Soup, salad, veggies, appetizers and even the perfect wine pairings go
along with this terrific lesson regarding slicing and dicing. Barbeque and Picnic Ideas - Wednesday, May 21 - Just in time for summer entertaining and Memorial
Day! This class will feature some techniques for grilling and roasting meats
and vegetables along with Dorothy's famous potato salad, deluxe sandwich
making and more. We will also offer 4 different wines for sampling which will
complement each course. Crepes, Crepes, and More Crepes - Wednesday, May 28 - Learn the basic techniques of great crepe making
and how to use the proper pan. This class also features good accompaniments to
go along with appetizer crepes, main dish crepes, and dessert crepes. Be a
pro! Also, we will feature 4 different wines for your sampling pleasure. Vegetables! - Wednesday, June 4 -OR- -
Thursday, June 5 6:00
– 8:00 pm $45 Featuring locally grown vegetables as appetizers,
main dishes, salads, breads, and desserts! Yes, vegetables can be all of
those things and more. Learn how to select fresh produce, how to chop, slice
and dice and how to make perfect sauces and breads to go with everything. We
also will feature 4 wines for perfect pairings. This is a vegetable class,
not necessarily vegan or vegetarian but it will feature vegetables as the

Pancakes! Chocolate! Learn the techniques of using a good sourdough starter
and how to keep it going for generations. All courses will be paired with
fine wines to complement and please, just in time for a great Father's Day
dinner. Pie Making - Wednesday, June 25 -OR- -
Thursday, June 26 6:00
– 8:00 pm $45 It is time for summer fruit pies and tarts. This
class features pie crusts, fruit fillings and more. We will also make some
handy-dandy appetizers and salad to balance off the pie tastings! Learn how
to select the correct pie baking pan or dish, how to make flaky pastry, and how
to get the filling "just right". Some recipes are really easy, some
take a bit more technique! And, or course, we will have 4 different wine
pairings to go with everything.
