    Phil's BBQ Sauces LIVE at Clementine's Kitchen

    Yes, "Phil" Varni and his wife will be guests of Mike Cleary and Kevin Kahl this Friday, September 8th during the live broadcast from our store on KIDD Magic 63 (630 AM) from 11am to 2pm.

    Phil's BBQ sauce is a true family secret. The original recipe dates back 2 generations! Phil's grandfather made the first batch. Phil's mom enhanced the recipe. Phil began with the recipe 20 years ago. He tweaked it a bit to create Phil's Original. After many years of cooking it on his home stove, friends and family have encouraged him to bottle it and the result is Phil’s BBQ Sauce.




    Phil's Grilling Tips:

    • With pork and chicken sprinkle with garlic salt and brown both sides. Baste with your favorite Phil’s BBQ Sauce and slowly cook the sauce onto the meat and keep turning and basting until preferred doneness is achieved.
    • To reduce the amount of grease drippings and to cut down on open flames, trim beef steaks to 1/8 inch fat. If you like juicy hamburgers, use ground beef that is 15 to 20% fat. Have your fish filets cut from 1 to 1 ½ inches thick as any thinner the fish will dry out too quickly. Pork chops should be at least 1 to 1 ½ inches thick and is ready when the meat is no longer pink along the bone and the juices run clear.
    • Use tongs to turn meat. A fork will punch holes in the meat and allow the natural juices to escape causing the meat to lose flavor and become chewy.
    • When grilling meats, it’s best to turn meat once. Use the lid to assist your cooking when you desire medium to greater doneness. Closing the lid decreases the cooking time by applying heat to all sides of the meat at once.

    New Tapenades From Coeur d'Olives

    You've already fallen in love with our 18 year Balsamic from Coeur d'Olives, now fall in love again with his new line of Tapenades.

    Les Cooper will be here this Friday, September 8th and will be sampling his Tapenades, as well as being interviewed by Mike and Kevin during their live radio broadcast.

    Come in for a taste an you'll soon see why we think this is another favorite to add to your list!


    Mike Cleary and Kevin Kahl - LIVE September 8th

    This Friday, September 8th, come by and meet Mike Cleary and Kevin Kahl as they broadcast LIVE from the Cafe at Clementines. They will be interviewing local food and gourmet personalities and having lots of fun with David, including the popular 'Stump Mike' quiz where Mike tries to identify odd gourmet gadgets that David has found for him.

    Also featured this week will be Tim Fisher, one of the owners and chefs at the newly opened Point Joe's Monterey. Their innovative seasonal cuisine includes a good selection of fresh and sustainable fish (Tim and co- owner Francisco Mellado were chefs at the Portola Cafe at the Monterey Bay Aquarium for many years). Come by and meet Tim and ask him about his new venture (I think he will have some samples too, but I am not sure!).

    Get those Knives Ready for the Holidays

    Remember our professional knife sharpening - only $1 an inch.

    Ron Albright, our master knife expert, will be happy to sharpen your knives to perfection. He has a mobile lab in his van and comes to Clementines whenever we have knives to sharpen. Just bring in your knives and he usually can have them back in a day or two. You'll be amazed at the difference a sharp knife can make.

    Remember, a dull knife can be more dangerous than a sharp one because of the extra force you have to use to get it to cut anything. But be careful when you get your knives back because you'll have to get used to having them so sharp! Band-aids not included.

      A cooking class designed for the busy person featuring healthful nutritious natural foods prepared quickly and easily. Class includes ample samplings of salad, soup, sandwich and dessert.     • Wednesday September 6 EVENING Demo
      6 – 8:00 pm Rolled Stuffed Turkey Roast -
      This is a fabulous presentation of how to butterfly a boneless turkey breast and then stuff it with a fruity herb dressing and then drizzle with a perfect finishing sauce. Complete with a discussion and presentation of Heirloom Tomatoes, their varieties and tastings. Sliced Heirloom tomatoes with olive oil vinaigrette is perfect with the turkey roast. Paired with 4 wines. Limited to 8. $35

      A special cooking class designed for your entertaining pleasures. Dorothy will cook and present several recipes featuring the many blue cheeses of the world, and will pair the presentations with fabulous wines to further pull out the flavors of the cheeses. This is not a class for wimpy cheese eaters! But music lovers unite! She will slip in some great blues music along with the cheeses and wines. This will be fun, and very sensual. Limited to 6. $40

      1 – 3:00 pm Chicken Fried Steak -
      An American road house classic. Learn how to make chicken fried steak and other “American diner” type foods. Dorothy will present several great side dishes to go along with the steak. And, of course, the gravy! Limited to 8. $25

      6 – 8:00 pm Chicken Fried Steak and Wine Pairing.
      The same menu as above, and then paired with great American wines and some beer, as well, for those who insist chicken fried steak must have it. We will gourmet it up a little with our fine wine and beer selections! Limited to 8. $35
